Gram flour(Besan) 1 /2 cup Ginger garlic green chilli paste 1-2 tsp Turmeric 1/4 tsp , Semolina 1 tbsp Salt to taste Lemon juice 1/2 tsp Fruit salt 1 tsp Water -to make batter Sugar 1/2 tsp (optional) For tempering ( tadka ) Mustard seeds 1 tsp Green chillies slit 1-2 Curry leaves 5-6 Water mix(add salt , sugar , lemon juice) One small glass plain water Olive oil (for tempering & applying in bowl)
Take a bowl add above mentioned ingredients in a bowl.except fruit salt once ur mixed become in pouring consistency ( alwayz keep in mind .whenever making anything in microwave .consistency neither to thick or thin) Take a microwave safe bowl apply oil now add batter & atlast add fruit salt & mix properly.cover with lid don't close tightly.& keep plain water glass next to it .(It helps to make dhokla soft) 4 min on HI or 100 % For tempering or tadka Take a pan or tempering ladle .add oil once it s a bit warm add mustard seeds..green chillies curry leaves ..at last add water mix ..let it boil for few seconds. Once dhokla prepared take it out carefully .cover with a plate & turn as we do for cake..now cut in desired shape.pour tadka on top of it ..let it absorbs tadka. Serve your spongy khaman dhokla
